Jambalaya
Jambalaya is an moderately easy dinner. Made with 2 lb. smoked sausage, 4 breasts or 1 whole fryer, 3 c. rice (raw), 3 to 4 green onions, chopped and small bell pepper, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Slice sausage thin and cook until brown.
Place chicken in same skillet and cook until done.
Saute vegetables in oil and drain.
Add vegetables and 1 1/2 cups water for every cup of rice.
Add rice and cook slowly until it is dry.
Stir occasionally.
