Jambalaya
Jambalaya is an moderately easy dinner. Made with 1 1/2 c. rice, 1 large onion, chopped, 1 bell pepper, chopped, 2 cloves garlic and 2 lb. shrimp or sausage and chicken, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion, peppers and garlic.
Add bay leaves, thyme and parsley for 5 minutes.
Add tomatoes and stock or water; bring to a boil.
Add choice of meat, rice and seasonings.
Cook 45 minutes.
