Jamaican Salsa
Jamaican Salsa is an moderately easy dinner. Made with 1/2 cup minced red onion, 6 tablespoon lime juice (bottled or fresh), 2 serrano chilies, seeded and finely minced (and green pepper), 1 ripe mango, diced (pineapple, too) and 2 teaspoon minced garlic, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put onions in strainer over a bowl (green and red pepper also).
Pour 1 quart boiling water over them and let them sit in the water, while you prepare other ingredients.
Then combine and mix thoroughly.
Cover tightly and chill for 2 hours before serving.
