Homemade Noodles
Homemade Noodles is an moderately easy dinner. Made with 3 egg yolks, 1 tsp. salt, 1 large whole egg, 2 c. flour, sifted and 3 tbsp. cold water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Beat the egg yolks and whole egg until well mixed.
Beat in cold water and salt.
Stir the flour in with a spoon.
The dough will be stiff, and you may have to knead in last of flour.
Divide dough in 3 parts.
Roll very thin, then cover with cloth until partially dry.
Roll up as for jelly roll, then slice with sharp knife.
Shake out strips; allow to dry before using.
