Homemade Chicken Soup
Homemade Chicken Soup is an impressive dinner. Made with 3 to 5 fryer leg quarters, 3 medium, chopped carrots, 3/4 c. cut okra, 3 medium, chopped potatoes and 2 stalks chopped celery, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil chicken until done; remove skin, fat and bones.
Chunk into broth.
Add potatoes, onion and carrots.
Simmer until tender.
If using fresh okra, add with carrots.
If frozen, add with all canned vegetables after carrots are tender.
Season with salt and pepper and simmer.
Add rice and simmer until rice is done.
Serves 10 to 12.
