Harriett's Congealed Salad
Harriett'S Congealed Salad is an moderately easy dinner. Made with 2 small pkg. lime jell-o, 2 c. hot water, 1 (8 oz.) cream cheese, 1 (20 oz.) can crushed pineapple and 1 c. chopped celery, finely chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Make Jell-O with 2 cups hot water.
Let Jell-O cool.
Put cream cheese in blender.
Add 1 cup heated pineapple juice over cream cheese.
Mix with cool Jell-O.
Add crushed pineapple, celery, carrots, pecans and Cool Whip.
Pour into 13 x 9-inch oblong Pyrex dish.
Put in the refrigerator to set.
Best if left to set overnight.
