Garlic Roasted Mashed Potatoes
Garlic Roasted Mashed Potatoes is an moderately easy dinner. Made with 4 garlic cloves, 4 lb. baking potatoes, peeled and sliced, 1 1/2 t. salt, 1 t. olive oil and 1/2 c. butter, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Place garlic on a square of aluminum foil; drizzle with oil, and wrap in foil.
Bake at 425 degrees for 30 min; remove from oven, and set aside.
Cook potatoes in boiling water to cover 15-20 min. or until tender; drain and transfer to a large mixing bowl. Add butter and remaining ingredients; beat at medium speed until fluffy.
Cut off pointed ends of garlic; squeeze pulp from garlic cloves, and stir into mashed potatoes.
Serves 8. Very good!
