Fried Pheasant

Mix ingredients in paper bag.
Heat in large heavy skillet over medium gas flame (325° to 350° dial setting on controlled burner), 1/4-inch melted shortening.
Shake in paper bag until each piece is well coated with flour (2 pheasants, cut in serving pieces and skin removed).
Add pheasants to hot fat and brown well on each side. Cover; reduce flame to simmer (200° to 225° dial setting on controlled burner) and cook until tender, about 40 minutes.
Remove cover and continue cooking 5 minutes.
Drain on absorbent paper. Serves 4.
