Fried Eggplant
Fried Eggplant is an moderately easy dinner. Made with eggplant, water, salt, 1 small onion and 1 small bell pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and peel eggplant.
Cut up and put in saucepan with water to cover and a little salt.
Cook until tender.
Drain and mash with potato masher.
Chop small onion fine and small bell pepper fine.
Add to eggplant.
Put enough flour to make thick mixture. In a skillet, put small amount of oil and let heat.
Drop by teaspoon into pan.
Brown on both sides.
