One piece of foil per serving. Lay fresh fish on foil and shape into "boat". Add 2-3 Tbsp. chutney on top of fish. Sprinkle with curry powder to taste.
Layer with fresh veggies. Sprinkle with salt and pepper and about 2 Tbsp. chicken broth.
Dot with butter, if desired.
Bake at 400Β° for 20 minutes or place on hot grill for 20-25 minutes.
Serve with rice.
