Empress Xi'S Imperial International Retreat Coffee - Scotch Pot De is an moderately easy dinner. Made with 1 pkg. butterscotch pudding and pie filling mix, 1/3 c. sugar, 1 tbsp. instant coffee, 1 1/2 c. milk or bailey's irish cream (optional) and 2 egg yolks, slightly beaten, this recipe delivers authentic, satisfying flavors. Combine the pudding mix, sugar, coffee and milk in saucepan. Cook and stir over medium heat until mixture begins to thicken. Pour a little hot mixture into egg yolks and stir quickly to blend. Add to mixture in saucepan and continue cooking until mixture comes to a full boil.
Chill, then whip cream and fold into chilled pudding.
Spoon into soufflΓ© cups or a serving dish.
Chill until set, about 2 hours.
Garnish with whipped cream and shaved chocolate.
Serves 8 to 10.
