Eggplant Dressing

Mix the eggplant, stuffing mix, egg, cheese, milk and onion; mix well together.
Pour into a casserole dish.
Top with 1/2 cup stuffing mix.
Bake at 350ยฐ for 35 minutes.
Serves 12.
