Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 large eggplant, 2 lb. hamburger, 2 onions, chopped, 2 green peppers, chopped and 2 (8 oz.) cans tomato sauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice eggplant 1/2-inch.
Parboil in salted water.
Brown hamburger.
Add chopped onions, peppers, flour, salt, pepper, oregano and tomato sauce.
Layer in casserole alternately the sauce and eggplant with sauce last.
Top with grated cheese.
Bake at 300Β° for 30 minutes.
