Crock-Pot Fajitos
Crock-Pot Fajitos is an moderately easy slow-cooker meal. Made with 1/2 lb. flank steak, stir fry steak, 1 medium onion, sliced or chopped, 1 red pepper, cut into small strips, 1 chopped jalapeño pepper (optional) and 1 tbsp. cilantro, this recipe delivers authentic, satisfying flavors. Cut steak into medium portions.
In crock-pot, combine meat, onion, peppers (green, red and jalapeño), cilantro, chili powder, cumin, garlic, coriander and salt.
Cook on low for 8 to 10 hours or high about 4 hours or until meat is tender.
After cooking, shred meat and return to mixture and serve hot.
To serve, spread mixture on tortillas.
Add desired toppings.
Roll up tortillas and serve.
