In a large bowl, cream Country Crock with sugar until light and fluffy. Beat in egg and vanilla.

Beat in dry ingredients just until well combined.

Cover dough and chill 3 hours.

Divide dough in half. Roll out 1/8-inch thick on a well-floured surface, cut with cookie cutter, place 2-inches apart on greased baking sheets.

Repeat with remaining dough.

Bake in a preheated 375Β° oven 8 to 10 minutes or until lightly brown.

Remove and cool on wire racks. Yields 5 dozen (2-inch) cookies.
