Chili Con Queso
Chili Con Queso is an moderately easy dinner. Made with 1/2 lb. bacon, 2 green peppers, 4 onions, 4 oz. can diced green chilies and 20 oz. can drained tomatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Fry bacon until crisp.
Remove bacon and most of grease.
Chop and saute peppers, onions and garlic.
Break up cheese and add to mixture in skillet making sure heat is very low.
Add bacon and chilies, chopped and drained, and drained tomatoes.
Cook over low heat 30 minutes.
Serve warm with tortilla chips.
Freezes well.
