Chicken Pilaf
Chicken Pilaf is an impressive dinner. Made with 1 c. onion, chopped, 2 cloves garlic, crushed, 2 tbsp. vegetable oil, 1 chicken breast (about 10 oz.), skinned, boned and cut in cubes and 1 c. uncooked rice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook onion and garlic in oil until tender, but not brown.
Add chicken; cook 2 minutes longer.
Stir in rice, raisins and seasonings.
Mix apricot syrup, soy sauce and sherry with enough broth to make 2 cups.
Stir into rice mixture.
Bring to a boil.
Stir once, reduce heat, cover and simmer for 25 minutes or until rice is tender and liquid is absorbed.
Add apricot halves.
Heat thoroughly.
