Carrot Salad
Carrot Salad is an moderately easy dinner. Made with 1 (3 oz.) pkg. orange gelatin, 1 1/2 c. boiling water, 1 (8 oz.) can crushed pineapple, 2 c. grated carrots and 1/2 c. flaked coconut, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Dissolve gelatin in boiling water.
Drain pineapple and add juice to gelatin.
Chill until consistency of unbeaten egg white.
Stir in pineapple, coconut and pecans.
Pour into lightly greased mold or individual molds.
Chill until firm.
