Brunch Enchiladas

(2 c.) ground, cooked ham, 1/2 c. sliced onions, 1/2 c. chopped green pepper, 2 1/2 c. shredded cheddar cheese and 8 (7-inch) flour tortillas, this recipe delivers authentic, satisfying flavors. In a bowl, combine ground ham, onions and green pepper.
Place 1/3 cup of the mixture and 3 tablespoons shredded cheese at one end of each tortilla. Roll up. Arrange tortillas, seam side down, in a greased 12 x 7 1/2 x 2-inch baking dish.
