Broccoli-Ham Soup
Broccoli-Ham Soup is an moderately easy dinner. Made with 6 oz. ham, diced, 2 cloves garlic, 2 tbsp. olive oil, 1 1/2 c. chopped fresh tomato, skinned and seeded or 1 (15 oz.) can tomatoes, seeded (saving the juice) and 3 c. chopped fresh broccoli, stems peeled, this recipe delivers authentic, satisfying flavors. Saute ham and garlic in the olive oil, about 3 minutes.
Add tomato, chopped plus juice, stock, thyme, salt and pepper.
Bring to a simmer.
Then add broccoli and pasta and cook until all ingredients are tender, about 20 minutes.
Adjust seasoning. Sprinkle each serving with cheese.
