Braised Quail
Braised Quail is an moderately easy dinner. Made with 1/4 c. plus 2 tbsp. all-purpose flour, 1/2 tsp. pepper, 8 quail, dressed, 1/2 c. bacon drippings and 1 c. milk, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine flour and pepper.
Dredge quail in mixture and set aside.
Melt bacon drippings in Dutch oven.
Brown quail on both sides.
Remove quail from Dutch oven and discard any remaining drippings.
Combine milk and the next three ingredients in a Dutch oven, stirring to mix.
Add quail.
Cover and cook over low heat, basting frequently, 30 minutes or until done.
Garnish with parsley, if desired.
Yields 4 servings.
