Barley Pilaf
Barley Pilaf is an moderately easy dinner. Made with 3/4 c. finely chopped onion, 3/4 c. sliced fresh mushrooms, 1 qt. chicken stock, 1/4 lb. butter or margarine and 1 3/4 c. barley, washed until water is clear, this recipe delivers authentic, satisfying flavors. Saute onions in 3 tablespoons butter 4 to 5 minutes.
Add mushrooms; saute a few more minutes and remove from pan.
Brown barley in remainder of butter, stirring often.
Put in casserole; add onions and mushrooms, salt and 2 cups chicken stock.
Bake, covered, in 350Β° oven for 1/2 hour.
Add remaining stock; stir and bake 1/2 hour longer.
Serves 10.
