Potato Cheese Soup
Potato Cheese Soup is an impressive soup you can prepare in about 1 hour 26 minutes. Made with to 4 tbsp. margarine, c. chopped onion, large garlic clove, large potatoes (unpeeled), coarsely chopped and large carrot (unpeeled), coarsely chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In a large saucepot, saute onion and garlic in margarine until translucent.
Add potatoes and carrot; saute 5 to 10 minutes.
Add stock and dill and simmer until all vegetables are tender.
Remove vegetables from pot and purΓ©e in blender with cream cheese and milk.
Return pureed mixture to pot.
Stir in cheese.
Season with salt and pepper.
Reheat over low heat.
