In a large skillet or saucepan, heat the oil with the garlic and shallots over moderate heat.

When they sizzle, add the tomatoes, breaking them up with your hands.

Crumble in the Ricotta cheese and stir in the sugar, basil and oregano.

Simmer until the sauce is thick, but still slightly liquid, 7 to 10 minutes.
