Karen's Lasagna
Karen'S Lasagna is an impressive pasta dish you can prepare in about 1 hour 10 minutes. Made with . vegetable oil, . ground beef, c. chopped onions, . minced garlic and (28 oz.) whole tomatoes, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Heat oven to 350Β°.
In skillet, heat oil over moderate heat. Add beef, onion and garlic and cook 7 to 8 minutes, stirring occasionally until meat is no longer pink.
Drain off any fat.
Add tomatoes, tomato liquid, tomato paste, 1 tablespoon of parsley, oregano, salt, basil and pepper to skillet.
Reduce heat to low and simmer about 1 hour, stirring occasionally, until thick. Meanwhile, in a medium size bowl, mix cottage cheese, Parmesan cheese, eggs and remaining 2 tablespoons parsley with a fork until well mixed.
