Italian Vegetarian Stew
Italian Vegetarian Stew is an moderately easy Italian soup you can prepare in about 2 hours 4 minutes. Made with small tender zucchini, medium onions, small pkg. mushrooms, large green peppers and large can crushed tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large skillet use part of the oil and brown zucchini, onions and mushrooms.
Salt and pepper to taste.
Set aside in a dish.
In the same skillet, add remaining oil, if needed, and fry green and red peppers.
While peppers are frying, pour crushed tomatoes in a saucepan.
Bring to a boil.
Put in green beans and cook until tender (do not overcook beans).
Add salt, pepper and red crushed pepper to taste.
(Should have a bit of a bite to it.)
When beans are al dente, combine all veggies to sauce.
Bring to a boil.
Take off heat and let set for 5 minutes.
Serve over pasta or eat plain with bread.
