Black-Eyed Pea Sausage Stew is an impressive soup you can prepare in just 58 minutes. Made with (16 oz.) pkg. smoked sausage links, small onion, chopped, (15 oz.) cans black-eyed peas, rinsed and drained, (14 oz.) can stewed tomatoes and (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large skillet, slice sausage into bite size pieces.
Cook sausage and onion over medium heat until meat is slightly browned. Drain.
Add peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10 to 12 minutes or until hot and bubbly.
Stir in the corn and cook 5 minutes longer or until heated through. Serves 6.
